Recipe

Because a few of you commented on how the bread looked tasty, I am passing along the recipe. I took it from a French website and translated it and added my 2 cents also. You'll notice it is pretty healthy too|

BLUEBERRY AND BANANA BREAD

Ingredients
• 3 ripe bananas
• 2 tablespoons of melted butter or margarine
• 2 tablespoons of yogurt (I used 0% fat vanilla Greek yogurt)
• 2 tablespoons of unsweetened applesauce
• ½ cup sugar
• 2 cups flour
• ¼ teaspoon cinnamon
• ¼ teaspoon nutmeg
• 1 teaspoon baking powder
• 1 teaspoon baking soda
• ½ teaspoon salt
• 2 eggs
• 1 cup of frozen blueberries (fresh would work too)

Directions
Preheat oven at 350°F.
Mash the bananas in a bowl.
Add the melted butter, yogurt, applesauce, sugar and eggs. Mix well.
In another bowl, mix the other dry ingredients and add to the banana mix.
Lightly fold in the blueberries without mixing too much (especially if they’re fresh).
Pour into a greased bread pan and cook: 75 minutes for one bread or 50 minutes for two breads or until a toothpick comes out clean.

Notes
Whenever a bread recipe has at least 2 cups of flour, I usually make two smaller breads who are still big enough to last 2 people for a whole week. Then I can freeze one and it also cooks faster.
When bananas get ripe, you can put them in the freezer and whenever you want to make bread or muffins, just defrost them and you have banana puree ready.

Also, here's a recipe for the yummy and healthy carrot soup I made yesterday and both my girl and I loved it.

It is and really healthy, not much sugar or fat really.

It is the perfect breakfast or pre-gym snack for me.

Oh, i think i will give it a go! Thanks for sharing, and i'd like more cooking posts lol - i need all the help i can get.
Can you use a bread maker for this stuff?

Oooo those do sound pretty healthy!! And soooooo goooood!! Aside from the blueberries which I don't like lol. But that's ok, I could just leave them out.

I love reading recipies but I rarely ever do anything with them. Unless others want to see them I wouldn't want you to waste your time just for me. lol

Oh yeah you could replace the blueberries with maybe chocolate chips or something ;)

Yeah, I don't see a lot of enthusiasm about the recipe, but I'd like a cooking blog.. I dunno, I might keep doing it, we'll see.

The chocolate chips would be gooood!! Not so healthy, but of course that's why they are so gooood!! lol

I haven't had banana bread in a looong time. My mom used to make it and I loved it fresh out of the oven with butter on it.
